Instructions:


1. Prepare the base:

In a large saucepan, melt the butter over medium heat. Add the chopped onion, carrot, and minced garlic. Sauté until softened, about 5 minutes.

2. Add the spices:

Stir in the cumin powder and turmeric, allowing them to sauté with the vegetables for another 2-3 minutes to release their flavors.

3. Add the lentils:

Rinse the red lentils under cold water until the water runs clear. Add the rinsed lentils to the saucepan and cook for another 2-3 minutes, stirring occasionally to coat them in the spices.

4. Add the stock:

Once the soup has finished cooking, remove it from the heat. Carefully blend the soup using an immersion blender until smooth. You can also blend in batches using a regular blender (ensure the soup cools slightly if using this method to avoid accidents).
