7-Up Cake Recipe

 7-Up Cake Recipe

Prep Time: 15 minutes

Cook Time: 50 minutes

Total Time: 1 hour 5 minutes

Servings: 8-10 slices

Ingredients for Cake:

400 grams self-raising flour

250 grams margarine (or butter)

200 grams sugar

3 eggs

250 ml 7-Up (lemon-lime soda)

½ teaspoon vanilla essence

Zest of 1 lemon

Ingredients for the Glaze:

1 cup icing sugar

1 tablespoon lemon juice

1-2 tablespoons milk (adjust for consistency)

Zest of 1 lemon

Method:

For the Cake:

1. Preheat the oven to 180°C (350°F). Grease and flour a bundt pan or round cake pan.

2. Cream the margarine and sugar: In a large mixing bowl, beat together the margarine (or butter) and sugar until light and fluffy. This will take about 3-4 minutes.

3. Add the eggs: Crack in the eggs one at a time, mixing well after each addition to ensure they’re fully incorporated.

4. Add dry and wet ingredients alternately: Gradually add the self-raising flour and 7-Up soda, alternating between the two, starting and ending with the flour. Mix gently until just combined.

5. Add flavorings: Stir in the vanilla essence and lemon zest. The 7-Up gives the cake a light, airy texture while enhancing the lemon flavor.

6. Bake: Pour the batter into the prepared pan and bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool the cake: Remove the cake from the oven and let it cool in the pan for 10 minutes. Afterward, transfer it to a wire rack to cool completely before glazing.

For the Glaze:

1. Mix the glaze ingredients: In a small bowl, combine the icing sugar, lemon juice, milk, and lemon zest. Whisk until smooth. Adjust the amount of milk to achieve your desired consistency – it should be pourable but not too runny.

2. Glaze the cake: Once the cake has cooled completely, drizzle the glaze over the top, allowing it to drip down the sides.

Tips and Recommendations:

Use room temperature ingredients: For a fluffier cake, ensure that your butter/margarine and eggs are at room temperature before mixing.

Zest first: Always zest the lemon before juicing it for the glaze to avoid difficulty.

Don’t overmix the batter: Once you’ve added the flour and 7-Up, gently mix just until combined to avoid a dense cake.

Experiment with flavors: If you’re feeling adventurous, you can swap the lemon zest for lime or orange zest for a citrus twist.

Make it healthier: If you prefer, you can substitute part of the flour with whole wheat flour for a healthier version, but note that this may affect the texture slightly.

This delightful 7-Up Cake is a simple, flavorful treat perfect for any occasion. The lemon-lime soda adds a light texture, and the tangy glaze gives it a delicious citrus kick! Whether you’re baking for a gathering or just want something sweet, this cake is sure to be a hit.
