Ingredients:


3 ripe tomatoes, cut into wedges

1 cucumber, sliced into rounds

1 red onion, thinly sliced

1 green bell pepper, thinly sliced

100g feta cheese, cubed

10 Kalamata olives

1 small beetroot, thinly sliced

2 tbsp extra virgin olive oil

1 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste


Method:


1. In a large bowl, combine the tomatoes, cucumber, onion, bell pepper, and beetroot.

2. Add the feta cheese and olives to the bowl.

3. Drizzle with extra virgin olive oil and red wine vinegar.
