Creamy White Chicken Lasagna: A Delicious Twist on a Classic

Ingredients
For the Chicken Filling:
• 600g chicken breast, cubed (2cm pieces)
• 400g minced bacon
• 1 onion, finely chopped
• 1 large carrot, diced small
• 2 celery stems, diced small
• 200g button mushrooms, sliced
• 4 garlic cloves, crushed
• 1 tbsp chicken seasoning
• 800ml chicken stock
For the Béchamel Sauce:
• 100g unsalted butter
• 3 heaped tbsp plain flour
• 1 litre full cream milk (room temperature)
• Pinch of cracked pepper
• Pinch of nutmeg
• 400g grated cheddar cheese
To Assemble:
• 1 packet lasagna sheets
• 400g grated cheddar cheese (or parmesan)
Method
Step 1: Cook the Chicken Filling
1. Heat a large pan over medium heat and cook the bacon
until crispy. Remove and set aside.
2. In the same pan, add the onion, carrot, and celery. Sauté
for 3–4 minutes until softened.
3. Add the garlic and cook for another minute.
4. Stir in the chicken cubes and cook until lightly golden.
5. Add the mushrooms and return the bacon to the pan. Mix
well.
6. Sprinkle in the chicken seasoning, then pour in the
chicken stock.
7. Let simmer for 15–20 minutes, allowing the stock to
mostly reduce for a more concentrated flavor.
Step 2: Make the Béchamel Sauce
1. In a saucepan, melt the butter over medium heat.
2. Stir in the flour and cook for 1–2 minutes, whisking
constantly.
3. Gradually add the milk, whisking continuously until
smooth and thickened.
4. Season with pepper and nutmeg, then stir in the cheese
until melted.
Step 3: Assemble the Lasagna
1. Preheat your oven to 180°C (350°F).
2. Spread a thin layer of the chicken mixture at the bottom
of a baking dish.
3. Add a layer of lasagna sheets, followed by a layer of
béchamel sauce, then more chicken filling.
4. Repeat until all the ingredients are used, finishing with
a layer of béchamel on top.
5. Sprinkle generously with grated cheddar or parmesan
cheese.
Step 4: Bake & Serve
1. Cover with foil and bake for 30 minutes.
2. Remove the foil and bake for another 15 minutes until
golden and bubbling.
3. Let it rest for 10 minutes before slicing. Enjoy!
